This book contains the interesting concept that by eating fat, we can lost weight. The front part of the book is a fascinating tale of the demonizing of saturated fat, by the soy industry, from some one who was there. Dr. Enig tells the story of her days researching fats and her efforts to sound the alarm on trans fats, only to find her research funding cut and her attempts fail. She recounts the flawed research linking saturated fat with cardiovascular disease. The last part is the discussion of coconut oil, its shocking banishment from our diets only to make a miraculous come back today, as one of the healthiest fats you can eat. The book includes a solid diet plan with whole grains, legumes, fruits and vegetables. The only caveat is that there are few negative comments about soy. However, it is processed, refined soy they are referring to and this is not made clear. Otherwise, it contains a lot of fascinating information that all foodies should read.
