Try this simple amd tasty tofu recipe complimemnts of Rachelle Wood Nutrition.

Thinking about trying something new for supper tonight? Maybe you should consider tofu. Rich in protein and full of bone building calcium tofu is a healthy alternative to animal protein. It has been used for cooking in Asian cultures for centeries. Tofu takes on the flavour of what you cook it with and this recipe is packed full of flavour and nutrition. If you cut the tofu into small bite size pieces you may be able to fool your family into thinking its chicken!

Tofu Fried Rice        makes 4 servings

1 TBSP canola or hemp oil
2 cloves garlic, chopped
1 pound firm tofu, cut into bite sized pieces
** I like Hardy’s organic PEI produced garlic tofu
2 TBSP Brags or soy sauce
1 cup chopped onion
1 cup celery chopped
1 green pepper, chopped
1 red pepper, chopped
2 ½ cup cooked brown rice
1 ½ cup bean sprouts

Heat oil and garlic in a large saucepan on medium high heat for 2 minutes. Add tofu and soy sauce and stir fry 2 more minutes.  Add celery and peppers and stir fry 3 minutes. Add rice and heat 2 more minutes. Add bean sprouts and cook for 2 minutes. Serve and enjoy this high fibre, low fat and vegetarian recipe.

Did you know that PEI produces tofu?  Hardy's Organic Products was established in October 2002. Since 1987, certified organic farm (Old Dock Farm) has been producing organic crops including soybeans.  The product line includes flavored varieties of: tofu, soynuts and coming soon lactose free frozen dessert.
