Avocado Squeeze
1/2 avocado, peeled, pitted, and sliced
1 tablespoon freshly squeezed lemon juice
1 cup frozen cherries, pitted
1 cup orange juice
1 portion, preferd protein powder or greens powder
1 tbl flax oil (optional)
Combine all ingredients in a blender and drink immediately
Jicama Salad
1 jicama, grated
1 carrot, grated
1/2 cup fresh basil
1/8 to 1/4 of a jalapeno pepper, grated
1/2 cup chopped miny leaves
1 tbl freshly squeezed lime juice
Toss all the ingredients together in a large bowl. Serve immediately.
Jícama, also known as the Mexican potato or the Mexican Turnip is high in carbohydrates in the form of dietary fiber. It is composed of 86-90% water; it contains only trace amounts of protein and lipids. Its sweet flavour comes from the oligofructose inulin (also called fructo-oligosaccharide).
Dr Elson's Breakfast Rice
1 cup raisins
1 tablespoon grated lemon zest
1/2 tsp cinnamon
1 cup apple juice
4 cups cooked brown rice
1/2 cup coursely chopped walnuts or almonds (lightly toasted)
Place raisins, lemon zest, cinnamon, and apple juice in a saucepan and simmer over low heat for 3=5 minutes, until the raisins are plump. Add rice and simmer a few minutes longer. turn off heat, add walnuts, and let stand, covered, for 10 minutes, or longer until all the liquid is absorbed. Serve warm.
